Christmas Chocolate Truffles

Makes about 26 

3 cups dates 
1 cup almonds or cashews (I used a mix of both) 
5 teaspoons cacao powder 
5 tablespoons of shredded coconut 

Place everything in a blender and pulse until combined. 
Roll into balls and cover in some extra coconut. 
Place in the fridge to chill until set. 
Easy! 

WARNING: dates may be low in fat but are EXTREMELY high in natural sugar (fructose) therefore these balls should be treated as a TREAT!

Simple Falafel Patties

3x cans no salt chickpea, rinsed
1/2 large red onion, chopped
1/2 cup fresh parsley 
1 teaspoon minced garlic 
1/2 teaspoon chilli flakes 
1/2 teaspoon turmeric 
1/2 teaspoon cumin 
Juice of 1/2 lemon

Blend all ingredients together in food processor until just combined.
Make into small patties and cook in moderate oven until golden. 

Serve on buckwheat wraps with salad and tahini. Yum!

Green Smoothie Bowls

Serves 2 

1x banana
1x apple 
2 cups almond milk 
2 tablespoons chia seeds
1 teaspoon maca powder 
2 cups of spinach 
Ice cubes 

Blend all together and top with your favourite granola, flax seeds & goji berries for an extra antioxidant boost!

Chia Seed Pudding

Serves 1

What you'll need:

2 tbsp chia seeds
1 tbsp shredded coconut  
3/4 cup almond or coconut milk (coconut milk will make it more creamy) 
1 tsp rice malt syrup (optional) 

Instructions: 

Mix all ingredients in a jar or cup and place in the fridge overnight.
In the morning give it a big mix and top with berries and nuts. 


Enjoy

Buckwheat Pancakes

Serves one. 

What you'll need:
1/3 cup buckwheat flour 
2/3 cup almond milk 
1 tsp GF baking power 
1 fake egg * or 1/2 banana 

What you'll have to do: 
WARNING: these pancakes will be very fragile because there is no egg so be careful when cooking.
 
Mix all ingredients together and let sit. While waiting heat up your pan with some coconut oil. Scoop desired amount of batter into the pan and cook until bubbles form (you know the drill) and flip. 

Serve with blueberries and chocolate sauce (cacao + melted coconut oil)

*flax egg 
Mix 1 tbsp chia seeds and 2 tbsp of water and let sit for 5 minutes until gel like consistency. 


Kale and Chilli Omelette

A new twist on an old classic 

Serves 1 

What you'll need: 

1 egg 
1 egg white 
Coconut oil
Small handful of chopped kale
Sprinkle of chill flakes 

What you'll have to do:

Start by stemming  your kale for a few minutes in the microwave, meanwhile whisk together the egg and egg white. Start heating your pan and add a little coconut oil. Add egg mix and make a thin layer on the bottom of your pan (like cooking pancakes) 
Once the egg is almost cooked through add kale and chilli flakes, then flip in half. 
Enjoy.

Hello, I'm back!

Hello, I'm back!

I've decided it's time I start blogging again!

Since starting my nutrition degree my passion for health and food has just continued to grow, so I've decided to commit to sharing recipes with you guys at least once a week.
